Focussing on specific set of offerings helps selling. You don’t have to explain what you do any more. A lack of focus means that there is always a competitor with more specialized skills and experience than you.
Think of it as the difference between the take-out restaurant offering Pizza, Pasta, Sushi, Kebap and Indian food compared with that one fancy Sushi place in your town.
At the same time a specific set of offerings leads to lean and often improved process. If your approach changes from project to project, you will not be able to build a robust process.
